Basic Sticky Rice (foundational to most Asian/Hawaiian dishes)

Select a quality grain glutinous ‘sweet’ rice from the grocery store (NOTE: this product is gluten-free). The preparation requires slightly more effort than long grain rice, but it is well worth the effort!

1cup sweet rice (rinsed 2-3x)

1cup water

1. Allow rice to soak in water for at least two hours prior to cooking. Rice can be soaked up to 24 hours.

2. Transfer rice to a metal colander or steam basket lined with cheesecloth over boiling pot of water. Rice should be pushed against ‘floor’ and ‘walls’ of colander / steam basket.

3. Allow to cook for 40 minutes.

Serve rolled in dried seaweed or with the following Asian-inspired ground turkey recipe!

Asian Stir Fry

1 lb ground turkey (dark meat)

1 head green cabbage

bunch green onions

minced garlic (several cloves)

fresh ginger, minced (2-3Tbsp)

plus any additional veggies like carrots, zucchini or peppers you have on hand.


3tsp chili sauce

3Tbsp sugar

8Tbsp rice vinegar

2Tbsp safflower oil

8Tbsp soy sauce

1cup chicken broth

3Tbsp cornstarch

Salt and pepper then saute the meat. Remove meat and cook the vegetables on high heat, adding salt and pepper to taste. Mix sauce ingredients and add to pot. Cook until thickened. Drizzle with sesame oil. Add cooked meat. Serve over rice!

Jo’s Ha-cha-cha & Ooh-la-la

3 lbs ground beef

3 onions

3 green peppers

1 stalk celery

3 Tbsp chili powder

Worcestshire sauce -- cover til everything looks like Worcestshire

Large box Velveeta

2 cans Rotel (drained - save the juice)

Picante sauce

Serve over Fritos, lettuce & tomatoes!

Sarah’s Superstition Mountain Salsa

1 can white corn (drained)

1 can black beans (rinsed & drained)

1/2 sweet red onion (finely chopped)

1/2 green pepper (finely chopped)

1/2 red or orange pepper (finely chopped)

1/2 cup Italian dressing

Combine all the above ingredients and marinate for several hours. Just before serving add 1-2 avocados (cubed) Serve with tortilla chips!
