Tonya's Smoked Brisket

Prepare the night before:

Trim off the excess fat, but leave a nice solid layer on one side. Rub the entire piece with a spice rub. Inject with beef broth 1/2” below the surface at various points in the meat. Cover & refrigerate.

Day of smoking:

Scrub the smoker rack. Build temperature up with coal and then light up hickory wood chunks. Place in smoker fat side down. Keep temperature between 195 and 205 degrees. Smoke should be clear or blue.

Finished when:

When the internal temperature reaches 165 degrees, take out and wrap in butcher paper, return to smoker until internal temperature hits 195 degrees. Then, pull out, wrap in towel, and put in cooler for one hour.

Sandy's Favorite Coffee Cake

1x beaten egg

1/2c sugar

1/2c milk

2Tbsp melted shortening or butter

Combine wet ingredients above.

1c flour

1/2tsp salt

2tsp baking powder

Combine dry ingredients above, then mix with wet ingred.

Top with cinnamon sugar and melted butter. Bake at 375 degrees for 20-25 minutes. Makes one round cake pan.

Jason's Rhubarb Crunch

1c flour

3/4c oatmeal

1c brown sugar

1/2c butter

1tsp cinnamon

Mix until crumbly. Press 1/2 the mixture into a greased baking pan. Cover with 4 cups of fresh rhubarb.

1c sugar

1c water

2Tbsp cornstarch

1tsp vanilla

Cook until thick and clear. Pour over rhubarb. Top with remaining crumbs and bake at 350 degrees for about one hour. Serve warm or cooled with whipped topping or ice cream!

Evan's Yeast Rolls

½ cup sugar

½ cup butter

1 cup boiling water

1 cup scalding milk

Cool to 110-115 degrees (proof)

2 tbsp yeast

3 eggs (beaten)

½ tsp salt

7 cups all purpose flour

Let dough rise first, then cut into roll size and coat in butter

Bake at 350 for 26 minutes

Tammy's Peanut Butter Cookies

1c butter, softened

1c creamy peanut butter

1c sugar

1c firmly packed brown sugar

2 large eggs

2-1/2c all purpose flour

2tsp baking soda

1/4tsp salt

1tsp vanilla extract

Beat butter & peanut butter at medium speed with an electric mixer until creamy; gradually add sugars, beat well. Add eggs, beat well.

Combine flour, soda, and salt in medium bowl; add to butter mixture, beat well.. Stir in vanilla. Cover & chill for 3 hours.

Shape into balls; place on ungreased cookie sheets. Dip a fork in additional sugar; flatten cookies with fork. Bake at 375degree for 7-8 minutes. Cool on wire racks. Makes approximately six dozen cookies!
